What’s for Dinner? Week of 8/27/17

We had a few nights this week where our schedules just didn’t allow us to have dinner at home, so this weeks menu only has a couple of recipes, but they are new ones!

As always, I’ll update the post throughout the week to let you know what we thought.

I love one-pan meals for the ease of prep and clean-up. This one looked especially promising because I don’t even need to precook the pasta. I love when I find meals that are easy and delicious, especially during busy weeks. I strategically place them on nights when I know I’ll be exhausted and will want a home-cooked meal with little hassle. This was good, but we didn’t love it. I think if I make it again I’ll tinker with the sauce to add a bit more flavor and maybe thicken it up a bit.

Pros:

  • Fast
  • Easy
  • Not many ingredients
  • Makes plenty for leftovers

Cons:

  • Browning chicken always takes longer than I think it should and makes a bigger mess

I think I was a little ambitious tackling this recipe for the first time on a weeknight. It was a bit more involved than I thought, but I learned a lot about the prep and I’ll be more prepared next time. The meal was delicious and had lots of really complex flavors. If I make this again on a weeknight I’ll definitely makes the rub ahead to save some time.

Pros:

  • Delicious
  • Not very expensive
  • Can be served as a holiday meal

Cons:

  • Takes a bit more time than outlined in the recipe
  • Lots of measuring and mixing so I made more dirty dishes than I hoped
