What’s for Dinner? Week of 9/3/17

This week I’m trying out some new recipes from a blog that I have been following- Carlsbad Craving. Her recipes have a lot of flavor and have been really good thus far. There are also a lot of unique items so I’m enjoying the increased variety. We’ve saved quite a few to Paprika so look for them in the coming weeks!

Sunday- Breakfast- Christmas Morning Breakfast Casserole
Sunday- Dinner- Secret Ingredient Mongolian Beef & Sesame Chicken Egg Rolls with Hoisin Sweet & Sour Sauce
Monday- Cheesy Buffalo Chicken Foil Packets & Crockpot Mac & Cheese
WednesdayParmesan Meatballs & Orzo in Mozzarella Basil Cream Sauce

 

Sunday- Breakfast- Christmas Morning Breakfast Casserole

My parents were gracious enough to do an overnight with the boys so my husband and I could attend a wedding. I didn’t want them to worry about preparing breakfast in the morning so I has this casserole ready to go in the fridge. It is one of my all time favorites and amazingly easy. I’ve started substituting the regular biscuits for Honey Butter and it’s an awesome addition of flavor. I also add a bit of mustard powder and a few other seasonings- I think it makes the dish a bit more robust.

Pros:

  • Super easy
  • Can be made the night before
  • Good mix of flavor
  • Toddler friendly

Cons:

  • Cooking the bacon can be pain- but I cook it all at once in the oven and that helps

Sunday- Dinner- Secret Ingredient Mongolian Beef & Sesame Chicken Egg Rolls with Hoisin Sweet & Sour Sauce

Mongolian Beef:
I wanted to try a dish that I know my husband loves when we order out. We were not disappointed! Very good flavor and the meat was very tender. All around a good meal if you’re looking to avoid take out.

Pros:

  • Excellent flavors
  • Only uses 1 skillet
  • Not a complicated recipe

Cons:

  • It needed a few ingredients I don’t use very often so I didn’t have them on hand

Egg Rolls:
I love egg rolls, so I wanted to see what was involved when making them at home. I was pleasantly surprised that they were manageable and these were delicious!

Pros:

  • Delicious- not a regular egg roll taste
  • Good even the next day

Cons:

  • Deep frying can be a turn off for the mess and health reasons
  • Must have a food processor to get the right consistency

Monday- Cheesy Buffalo Chicken Foil Packets & Crockpot Mac & Cheese
Chicken: 4.5
Mac & Cheese: 3.5

Chicken:
I love buffalo chicken pretty much anything and this did not disappoint. Lots of great flavor, not just heat. The ranch crema sauce really made the meal, in my opinion, and I don’t like ranch dressing. I was surprised at how well the flavors went together and how well it all tasted as a meal. We will definitely have these again.

Pros:

  • More flavor than regular buffalo chicken
  • Easy clean-up with the foil
  • Standard spices and ingredients

Cons:

  • Make sure you build in time to marinade for good flavor (not really a con, but something to consider)

Mac & Cheese:
This recipe started out really strong and would have had a higher rating, but it didn’t last well in the crockpot over time. Right at the 2 hour mark I would say it was perfect- creamy, smooth, gooey. It was ready a bit before I expected and soon after, the sauce broke and the cheese became dry and pasty. It still tasted fine, but if I had made this for a holiday and it needed to last for a long meal, it wouldn’t have made it. I think I’ll try is again and play with the ratios to see if I can make it last a little longer in the pot.

Pros:

  • Easy
  • Not may ingredients or prep

Cons:

  • An extra step of pre-cooking the pasta
  • Doesn’t hold up for long

    I haven’t been cooking much because of all the house showings, but I’ve been craving mac and cheese and the crockpot will be perfect with no cleanup!

      I love slow cooker meals when things get really busy! I hope you get a chance to make some comfort food soon.
