What’s for Dinner? Week of 9/10/17

If you read the post from the week of 9/3/17, you know that I’ve been loving the blog Carlsbad Cravings for amazing recipes. I’ve made quite a few of them now and I really like her style, approach and flavors. If you’re looking for a good weeknight meal, you may want to check the recipe beforehand. The recipes aren’t overly complicated, but to create her wonderful flavors you’ll need to spend some time with your measuring spoons and spices. I tried some new recipes this week as well as a few old favorites.

Sunday- Chicken Fajitas with Chipotle Lime Crema & Creamy Avocado Dip
Tuesday- Skillet Chicken in Creamy Mushroom Sauce with Bacon and Pesto
WednesdayCrisp Lemon Parmesan Garlic Chicken & Veggies
SaturdayChicken Gryos

 

Sunday- Chicken Fajitas with Chipotle Lime Crema & Creamy Avocado Dip
Stars: 5

The plans for this meal actually changed when we invited my in-laws over for dinner. I was originally going to make Chicken Fajita Wraps with Creamy Avocado Dip, but I wasn’t sure everyone was going to want wraps so I adjusted. I made a big batch of the meat and veggies and served it over rice with the sauces and toppings on the side- buffet style. It was a big hit and the marinade was AMAZING! I was scared to use liquid smoke because I had tasted in once in chili and hated it, but I’m glad I gave it a shot.

Pros:

  • Great meal for entertaining
  • Excellent flavor for not grilling
  • Easy to prep ahead and make on a weeknight

Cons:

  • Time- you need to let the meat marinate to get a good flavor

 

Tuesday- Skillet Chicken in Creamy Mushroom Sauce with Bacon and Pesto
Stars: 3

This meal was just ok, we would eat it again, but it wouldn’t be our first choice. I think with some tinkering I could make it fit our tastes, but overall it was just ok

Pros:

  • Easy
  • With the exception of the bacon, it’s a one pan meal
  • Don’t need to buy any crazy ingredients you’ll only use once

Cons:

  • The sauce is a little thin and lacked some flavor

 

WednesdayCrisp Lemon Parmesan Garlic Chicken & Veggies
Stars: 5

This is a newer recipe to our menus and it is always a hit. The flavor you get from marinating the chicken is excellent and it always turns out crispy in the oven. I’ve made this at least three times over the last few months and each time my husband says- This one is a 5, make sure to save it!

Pros:

  • Delicious
  • Not complicated
  • Standard ingredients
  • Quick

Cons:

  • Make sure you build in time to marinade for good flavor (not really a con, but something to consider)
  • You dirty a few dishes for this one

SaturdayChicken Gryos
Stars: 4.5

I was skeptical of this one because it involved dark chicken meat, which admittedly intimidates me. I also needed to create a “meat pile” of sorts to get the desired outcome. I was feeling adventurous and I’m so glad I gave this a try. It was awesome!

Pros:

  • Fun meal you don’t get everyday
  • Great flavor on the chicken
  • Not complicated and even fun

Cons:

  • This takes some time to cook so not something for a weeknight
  • If you use a cast iron skillet, clean up can be a beast
