What’s for Dinner? Week of 9/17/17

This week was a mix of some of our favorites as well as some new meals. I’d say this week was a hit all the way around- almost all 5s across the board! Two of these are even slow cooker meals for extra ease.

Sunday- Pan Seared Chicken and Broccolini in Creamy Mustard Sauce
Monday- Roasted Lemon Butter Garlic Shrimp and Asparagus
WednesdaySlow Cooker Chicken and Mushroom Stroganoff
ThursdayBest Slow Cooker French Dip Sandwiches

 

Sunday- Pan Seared Chicken and Broccolini in Creamy Mustard Sauce
Stars: 5

I had made this once before and it was good, but not great. This time I changed the sauce a bit and it was excellent. I really like sauces that are thick and creamy, ones that really coat the pasta. To achieve that, I mixed about a ½ cup of cream with a tablespoon of cornstarch and added it to the sauce. That helped it thicken and made for a creamy filling meal.

Pros:

  • Easy meal for a weeknight
  • Different flavors than the usual red and white sauce
  • Toddler approved (I told him it was mac and cheese with trees)

Cons:

  • Broccolini can be hard to find- I subbed baby broccoli
  • Mustard can be polarizing (Although I had a friend who HATES mustard try it and she loved it…until I told her what was in it)

Monday- Roasted Lemon Butter Garlic Shrimp and Asparagus
Stars: 4

This is the most popular recipe on Carlsbad Cravings so I had to give it a try. We served it with saffron risotto and it was a great meal. I can see why it’s so popular and why people love it. Very easy and tasty meal, great to change up from chicken and beef.

Pros:

  • Easy
  • Not much prep
  • Cooks fast

Cons:

  • I hate peeling and deveining shrimp and that was the only option I had at the grocery store

 

WednesdaySlow Cooker Chicken and Mushroom Stroganoff
Stars: 5

If my husband could give this higher than a 5, he absolutely would. I almost feel guilty about how easy this meal is…almost. It is truly a dump and go meal for the crockpot but it tastes like you spent much more time making it. It is also great for entertaining because you can spend your time with your guests and not fussing over a meal. I’ve served it to family friends and both sets of parents- always with rave reviews. I serve this with dumping size egg noodles and it is a great meal, especially for fall.

Pros:

  • Delicious
  • So easy
  • Standard ingredients
  • Quick prep

Cons:

  • Maybe not the healthiest meal out there

ThursdayBest Slow Cooker French Dip Sandwiches
Stars: 5

We tried French dip sandwiches a few weeks ago, and they were ok, but not great. Something was missing in the flavor department. I decided to try the recipe for my favorite blogger, Carlsbad Cravings, and it was, of course, amazing! The meat was so tender and delicious.

Pros:

  • Easy crockpot meal
  • Delicious
  • Great for a weeknight or a busy weekend lunch

Cons:

  • Large cuts of meat like this can be expensive- I got ours from Aldi for savings
